I'm unable to locate the folder for general information about the cockpit dials etc and key stroke commands.
Using "shift E" opens the front canopy, which key stroke opens the rear cockpit ?

Eh? The carrier must be on water. It doesn't care what or where.

The easiest thing is to do as I do: Start your flight at Gibraltar (LXGB - default runway). While you're on the runway, spawn your fleet directly ahead of you at a distance of 5 miles. You'll be able to see it from the cockpit.
From there, you can either warp directly to the carrier or you can fly out.

More on this:

You can move the helos or ships around in the formation to suit yourselves.

The two numbers after the name of the item are X and Y cords relative to the carrier - in metres.

As always - make a backup copy first.

You use aicarriers.net - which you can find via other threads here.

You're going to have to start learning, I'm afraid.

You'll need AIBTC, which you can get here.

This will allow you to decompile ship traffic BGL files, which have a different format to air traffic files.
You can then edit the traffic positions you want.

Enjoy! It's very addictive.....
Of course, there's no guarantee that it'll work in P3Dv4 - but you have to start somewhere.
